question: this bread had a best by date of the 11th. ive been keeping it in the fridge since then. i dont see any mold. is it possibly still good to use or should i just toss it??
I think you should be okay as long as there are no signs of spoilage. I personally freeze my bread but the fridge should also extend the best by date fairly well

Freezing bread makes it last longer than putting it in the fridge or pantry per FDA.

best buy dates are mostly for legalities of selling food

I usually stick it in the fridge for a few days to thaw but you can also toast it or microwave to thaw more quickly
