What can I professionally do if I accepted a job offer and then got another offer within my first week that I would rather take because it pays more?

Tell your current employer your situation. Tell them you got another offer for $X. Tell them you would like to stay, but they will need to match the salary. They’ve already invested some money in you, so they may. If they don’t, you bounce.

Unless you have some kind of contract stipulation, you don’t owe them anything. It’s polite, sure, but it’s your life. If you died, they would post that job the next day. This isn’t a family ya know. Jobs don’t really care about you. So do what’s best for you.
