It’s because the manga had to go on a long hiatus, and if they didn’t end on this cliffhanger, there wouldn’t be another good spot to pause until being almost entirely caught up to the manga. If that were the case, you’d get maybe 10-20 more episodes now, but then you’d have to wait 5+ years for another season

It’s basically a pick your poison type deal. Either get more episodes now and then have to have a massive multi year gap, or get smaller seasons but have them release every 1-2 years
