yeah she was prob in a dv relationship before or had a family member that was abusive. It’s probably too early for her to feel comfortable opening up about it but the best thing u can do is just be gentle and give her reasons to trust you. if u flat out say “ I would never hurt you” in response she may be like well that’s what he said too. just show her thru ur actions that she’s safe with you and over time she’ll feel it and trust you if you’re a good guy

if she made the joke she might have been with someone who could switch from calm to angry out of nowhere and hurt her, which could cause that kind of reaction
