There are very pretty wedding rings for under 300 dollars. What matters is putting in effort and care.

And I’m not a ring person so I’d feel bad if he bought a very expensive ring for me to not wear it unless we’re in public and then I fidget with my rings too much

See I even think this is a waste of money. A “big wedding” is literally just putting on a show for family and friends. It has nothing to do with the couple. I say, save that money and put it towards a house! That way you’ll be setting yourself up for success and stability rather than splurging thousands on 1 night.
