Bloody Spade by Brittany M Willows! It’s an urban fantasy duology set in a queernormative world, and the main couple is bi x demi. It’s very slow burn, very sweet with many intense plot moments too, and one of my fav series!

It’s slightly on the contemporary side (paranormal romance with a mafia twist) but His Unexpected by Bailey Elizabeth is also a fantastic slow burn trilogy, if you are looking to eventually get to spice later in the series. The other duology I mentioned is not steamy. Just up to what you’re looking for out of the relationships progression!

Just realized both series have bi x demi lead couples lol apparently I have a type (probably because I’m demibi myself). But I find soooo much good slow burn when it comes to demi characters. I’ll try to think of a few more books when I’m out of bed in front of my shelves!
