Because a huge amount of trade comes through the Suez/Strait of Hormuz and Middle East in general, and more importantly, it has a huge amount of energy resources and is at the intersection of Europe, Asia and Africa

Basically, a global empire like the US needs to control the Middle East to control the world. Israel is a giant US military base that occupies the ME on behalf of Western interests

As Joe Biden famously said, “If Israel didnt exist, we would have to create it” Which it did. Western powers did create Israel in a process of ethnic cleansing of Palestinians called the Nakba
