Severe thunderstorm watches don’t mean “storms are coming”, they mean “a storm could occur with severe conditions. A severe thunderstorm *warning* means there’s a storm within severe limits (one inch hail, 58mph wind, tornado potential, etc) within your vicinity. That’s the difference between watches and warnings

The heating of the air by there being no clouds leads to more instability which is what causes storms to pop up and strengthen

If you ever wanna know if you’re gonna have storms, just look up “spc conv” and go to the convective outlook page. From there you can also go to active watches on the left and see if there’s one in your area
