Salt and pepper shrimp, imitation crab bake or stir fry, crab rangoons, wonton soup, and lo mein. Extra plus if they have that square shaped coffee/chocolate cake that most buffets seem to have.

American Chinese food is real Chinese food because it evolved from the culinary traditions of Chinese immigrants, primarily from Guangdong and Fujian, who adapted their recipes to local ingredients and tastes. Just as Sichuan, Cantonese, and Shanghainese cuisines are all "real" despite being different, so too is American Chinese food. It’s simply another regional variation shaped by migration and cultural exchange.

China’s own dishes constantly evolve: Lamian noodles came from Persia, Sichuan food relies on New World chilies, and Hong Kong cafes blend British tea culture with Cantonese flavors. If those count as "real," so does General Tso’s chicken.

Authenticity isn’t about rigidity, it’s about continuity and innovation.
