Sorry for the confusion, the coals were super hot so that is why it is so high up, as the coals cooled off i lowered it to maintain a constant temperature. Takes a little bit of guesswork but it worked out.

some people season the cutting board and rest the cooked steak on it. I like to season my mouth, eat the steak raw, then set myself on fire
