I’m Shanghainese. Soup dumplings shouldn’t be sitting in a sauce or deflated like these. This looks like a first try at wontons in chili oil.

Except it’s not 😭. Adding chili oil doesn’t mean they cancel out the fact they are soup dumplings. That’s just the way I like to eat it.
