
minced braised pork belly (marinated in soy, sake, mirin, ginger, shiitake, and garlic. then pressure cook on high for 40min in marinade + water) make sure to sear it really good (like almost black) before pressure cooking to build up lots of flavor. you can also mince it and throw it under the broiler on high for 10min or so to really crisp it up if you like. s tier ramen topping. bonus points if you make the broth from scratch (tonkotsu is my fav).
