Day 6: Enchiladas (directions below) Pack of tortillas (maybe more) Rotisserie chicken (or canned chicken if that’s all you have) Shredded cheese About 1.5 cans of red enchilada sauce Refried beans and/or 90 sec Spanish rice
Day 5: Stir Fry Bag of veggies from dollar tree Soy sauce (lowkey grab some packets from a Chinese or sushi place) Cooking oil Rice or noodles Protein of your choice

Spread about 1/2-3/4 of a can of sauce into a glass baking dish and up on the sides. Shred chicken in a bowl and add some sauce in with the chicken and stir (leave some to top them with). You can add Greek yogurt or cream cheese to make it creamier. Fill tortillas with chicken, you might need more tortillas depending on how much filling you make. Roll into enchilada shape and place in the dish. Top with the rest of the sauce and top with shredded cheese.

Cover with foil and bake for about 30 minutes at 350°F or until the cheese is melted. Then take off the foil and let it bake for another 10 minutes or until the cheese is golden brown. Serve by itself or with rice, beans etc. you could also get some frozen bell peppers from the dollar store and sautee them up

I’ve also put rice in the filling to stretch it and had zero issues
