Trying to add more veggies to my diet but I’m a super picky eater. I don’t mind the flavor of most stuff, it’s the half firm/half soft texture of cooked (and some raw) veggies that gets me. Any tips/suggestions?

What about blended veggie soups? They’d be a good way to get a lot of veg without having to put it in a bunch of unhealthy or unnecessary stuff.

i either eat them raw or cook all my veggies soft. most people don’t like mushy vegetables but that half cooked half soft texture you mentioned makes me feel sick. cook whatever it is with broth, stock, and animal fat for flavor. use as little liquid as possible. so you use the broth/water to cook it (so you don’t need a shit ton of oil) and the water will evaporate so you’re not totally boiling the veggies. this also makes really fast caramelized onions

I’m usually okay with smaller amounts of veggies in something, like if I go to chipotle I’ll get lettuce and corn salsa on my bowl. I’m also good with soups and salsas and stuff like that as long as they’re not too chunky. I really like most fruits tho so that tells me that sweetness helps me overcome texture issues

I do enjoy cilantro on a bunch of stuff. I’m also not opposed to leaves in or on something, just as long as they’re not a main ingredient. So like I wouldn’t be able to do salad, but something like a spinach and artichoke dip or a leaf of lettuce on a sandwich would be fine. I also make soup occasionally when it’s a bit cooler out where I just bake and blend some veggies

Yes, I’m totally down for a wrap, tortillas are a staple food in my house lol. I’m also pretty big on Mexican food or pretty much anything with a lot of bold flavors and spices. I’ve also been meaning to get into curry a bit more cuz it has a lot of great flavors with less of the textures I dislike
