Cast iron sear it with butter garlic and rosemary on both sides then pop in the oven until the thermometer comes out whatever doneness he likes and spoon the butter over the steak after you flip it

Good call on the oven, a lot easier to do that way. Make sure you probe both sides as they can cook at different speeds 😁👍🏼 he will love it!!!

Not in it constantly, just check the temp with one once you pull it out
