Coming from a Chef that does catering and hosting all the time. Make as much as possible ahead of time if you want to spend time with your guests outside the kitchen. You honestly can have most of everything done before everyone gets there and just hot hold in a low oven or reheat right before you want to eat. Steak is recommend doing while guests are there or right as they are about to get there but can be done beforehand just shoot to cook one-2 temperatures less than you want it.

I’m bad at cooking but I think getting the guestlist right is more important than the cooking.

So far my plan is to make the ceaser dressing, vodka sauce, chimichurri the day/morning before (no longer doing a dessert). For the steak im going to reverse sear and I heard I can parboil the pasta and rice the potatoes beforehand! Im slightly worried about timing everything however

You can cook pasta to el dente then shock it (put in ice bath too cool quickly then strain again and toss lightly in oil to prevent it from sticking) then warm in sauce. The pasta can be done in morning or day before. Potatoes you can rice them and mix cream and butter then put in casserole dish and reheat in oven covered. Takes about 20-30 minutes in oven to reheat in oven at 325 covered. Pasta takes just a couple minutes in sauce to reheat.
