okay! 1. cook your rice and let it sit in the fridge for a day for best results. 2 cook your protein. i did bacon until it was kinda floppy and cooked instead of crispy. set aside. 2 prepare your veggies. i did onion, jalapeños, and garlic. make sure your veggies are well chopped and the garlic is minced. 3 add peanut/ avacado oil to a wok on medium high heat

4 drop in the onions—those take a bit longer to cook. once they've started to soften drop in the jalapenos, and then eventually once those r cooked the garlic as well—only cook for an extra minute with the garlic in because it'll burn if u add in the rice too late

5 still cooking on medium high, add in the rice. incorporate veggies into the rice. make a hole in the middle of the rice. add in 2 or so eggs—breaking the yolks—and incorporate into the rice

once you've cooked like this for a few minutes and your eggs are incorporated throughout, cut the heat to medium low and pour in soy sauce—to taste

cut the heat once the soy sauce is incorporated and add back in your protein. garnish with scallions if on hand

I do mine like that but I cook the eggs beforehand. And drop all my veggies in a microwave rice. And I pre cut my veggies and put them in a gallon bag and take out a handful or two when I go to cook it. I do scallions, onions, red onions, sliced garlic, carrots and bell peppers. Tbsp of sugar, onion powder, cracked pepper. Add my eggs in last

U can also take ur veggies simmer them in oil, pour in a good 1/4 cup of teriyaki sauce, serve over rice. Stir fry

i typically also do carrots in mine but i was out. i recommend adding ginger into the mix with the other veggies. i was unfortunately out ☹️

I also only do carrots fresh. I don’t freeze my carrots bc they take forever to thaw

omg, just felt the need to share my GO TO struggle meal I think you’d appreciate it! it’s bean salad, basically you take any can of beans, canned/frozen/whatever corn, chop up whatever veggies are about to go bad, squeeze some lemon or lime juice, add any oil (I prefer light oils like grape seed), and some cilantro if u have it nd it’s GREAT! gets better as it sits in the fridge too :)

it’s very very good when u make it with chopped bell peppers, tastes and looks like a rich people meal, is high and fiber, and only around $1/ serving depending on where u shop/ what u already have!
