For whatever reason chicken is the only thing I can’t cook. Every single time I try to make chicken in a pan it goes horribly wrong. My house is filled with smoke, the chicken is raw inside, and there’s hot oil in my eye

I don’t cook chicken on the stove at all lowkey I only cook it in the oven or fry it in cornflakes. When cooking in the oven set for 425 and put in a 8x8 casserole dish so it’ll hold the fat and the seasonings/sauce if you put it on there and cook for 25-35 minutes (depending on your oven) or until it reaches 165 with an instant read thermometer

Are you drying the chicken a bit before cooking— as in, blotting it with a paper towel? Do you cut into it or pound it to flatten it more? That can greatly help it cook more thoroughly. Add seasoning closer to when it’s finished to avoid smoking those, and lower the temperature a bit more (this is where pounding the chicken can cut down on cooking time as well). If you have one, you can also use a lid on after you cook one side to help it cook through and not dry out as much in flavour/etc.

Also, weird tip but use a pot to pan fry chicken + extra long cooking chopsticks; helps avoid hot oil splattering

It seems to be okayish in the oven but pan frying is where it all goes wrong. I even use a high smoke point oil and it does nothing because my entire house is foggy 😭

I had it cooking for 40 minutes on medium 😞 somehow it was raw in the middle but yet was smoking like crazy

I’m not even a beginner I’ve been cooking since I was 15 and I’m 22 🥲 pan frying chicken is the one thing I can never do right

Of course! It can be a lot of trial and error— I struggled with it, too, but I love it now. I won’t lie, I often cut it up into smaller strips just because. Haha

Oh! Also… how many pieces of chicken do you cook at a time? Overcrowding the pan can lead to uneven cooking with both burns and undercooking. I don’t imagine you’re loading it, but… I’ve done that before!
