Personally I can almost always break down why I have a certain opinion even if I wasn't consciously thinking of the reasons when I formed the opinion

They are logically defensible. You can claim they are purely subjective and defend that using logic thereby defending your original opinion.

So then by this, pretty much any opinion is valid because you could just claim subjectivity

Subjectivity can be proven through logical reasoning. In terms of color, for example, “every brain processes colour uniquely, and therefore colour is not something that can be universally agreed upon”. That makes your subjectivity valid. Most of the time, this isn’t the case.

Just because something is logically defensible doesn’t make it objective truth. It just means that the opinion has been formed with genuine thought

It is not about the opinion itself, it is about the person holding the opinion. I guess a better way to say it would be “if you can’t defend your own opinion through logic, your opinion is invalid”. The point is that people aren’t arbitrarily forming opinions with no basis in reality
