I mean I think it’s fine for bi people to make jokes about ourselves. Obviously we all know we’re not just half lgbt+, we’re just being silly about our own identity & experience

But I hear those jokes from NON-BI people who think it’s ok to make about us. I hear them from people both in and out of the queer community. It’s no longer funny and it says “you’re only partially welcome in the queer community”.

I also think there’s a difference between making the joke about “us” as bisexuals and making the joke about solely yourself as a bisexual. I won’t stop you from making a joke that only refers to yourself (I still think it’s in poor taste but whatever), but when you apply that joke to other bi people, gross.
