I don’t think that’s possible for them to do legally because the contestants probably sign an agreement that they understand they’ll be there for 6 weeks or less. Extending the season could be considered a hostage situation. But again, I know nothing about this stuff.

I doubt it. There are all sorts of contracts and I’m sure there are parts of the crew that have contacts for other projects once this show ends. Also, the islanders have taken of work to be here so that’s probably another thing. They won’t change it
