In the comics a big part of his character is having to problem solve when he runs out of webs. Giving him organic webs has zero benefits story wise and just simplifies his character

I love a hybrid of mechanical and organic ¯\_(ツ)_/¯ shows his smarts and his freaky spider side To solve the running out of webs thing, id say his organic webs are harder to use and are less reliable and probably also run out so he still relies on his wits

At least with sam raimi the organic web aspect took away basically all the intelligence aspects of his character
