Me and my bf love jambalaya, and we used to use zatarain mix with pork sausage. We started adding in vegetables one batch at a time to see what we liked (onions, peppers, jalapeños, chilies, tomatoes we’ve already added, I wanna try adding okra next). We switched to the low-sodium zatarain mix. We started adding shredded chicken breast.

This was 1000% easier than trying to find a healthy recipe online that we would like and be able to make despite our executive dysfunctions. We took a meal we already liked and knew we could make, and made slight alterations over a period of months. It also helps that we use canned tomatoes&chilies, and that onions/peppers/jalapeños freeze well. We buy in bulk and freeze them and chop them up when we have the energy and refreeze them until we need them

YES YES YES YES YES as someone with an eating disorder (I flip between not eating and only eating safe foods that aren’t super healthy) this is the thing that helped me the most with regulating my diet. I would binge things and then get frightened of them because they were “unhealthy” so then I’d stop eating all together. Now I’ve made my safe foods more mindfully and it’s really helped!

Also chopping up veggies really small or blending them and adding them to a sauce or soup. Especially helpful when it’s a texture issue

Most recently, we switched from pork sausage to chicken sausage!! I think we’ll eventually try seasoning the shredded chicken breast more and getting rid of the sausage element entirely.
