Binary code is a base 2 number system which is the core system used for all forms of computing systems, and it’s made up of 0s and 1s, with 0 meaning “off” and 1 meaning “on” In the same vein, the gender binary is often the term used to describe the idea of there only being 2 genders, male and female, so when saying “Why stop at just 0 and 1” they’re saying that we’re defying the traditional gender binary and using a reference to binary code to show that we’re more than just a 0 or a 1

I hope that helps! It’s a really oversimplified explanation of binary but I don’t think much more is needed to get the joke without just getting into a bunch of extra stuff :)
