Yeah, Ramsay is very tough on his chefs but he has a point that working in a kitchen is extremely stressful and they need to be able to not make mistakes under pressure. He's shown several times throughout his shows that he knows when to back off and be gentler, and that he's generally very nice and chill outside of the kitchen. They just edit the shows to focus on his angry yelling because it's more entertaining which makes it look like he's an angry dick all the time
