As somebody who live in Lancaster PA (I’m not Amish but I see them daily) , I get your point but your description of them is horribly inaccurate

They pay income tax, sales tax, and property tax (at least in PA). They don’t pay social security or Medicare tax though because their religious beliefs require them to refuse those benefits
