In the US black and white people are more based on culture. Black and white people tend to act differently from each other because of things like slavery and segregation, where they grew up with different teachings, traditions, and beliefs. Theoretically, a person with white skin could become a person with black skin through skin grafting, but that “white” person wouldn’t suddenly become a “black” person because they didn’t grow up with “black” culture
Race is a social construct and always has been because racists just mixed a genetic condition with a culture and called it a category to define people. Gender is similar, sex is the science as to which to define which cells people were born with, gender is basically how we express ourselves. Sex is the genetic and gender is the identity. Also, saying that sex is only man or woman is false because there are hermaphrodite people which are a mixture of both
