Quick tips for the new American dark age: Lots of plants you can get at the store will just keep growing with very minimal effort basically forever if placed in a pot of soil. Green onions are the easiest but really any grass-ish plants will do it.

I kept the same green onion for over 3 months just in a pot. You just snip off the ends and it just keeps growing. Garlic chives also do this. Lemon grass as well.
