It’s about the context it’s displayed in, not just that they’re there. Same reason they removed the white person from the Cracker Barrel logo, as he was supposed to be an overseer. Also, here’s the design that Aunt Jemima evolved from:

I’m going to go with what the company themselves said, but if this is the story you’re referencing, that person wouldn’t have even been involved in the business.
