Cold take: stalemate shouldn’t exist. (at least not because of no legal moves.)
If you have to move into check, then move into check and get checkmated.
You can still keep stalemate from the 50 move rule or the repeat rule

Have I been playing wrong? I play that if the only move the king can make would be into a check that counts as a loss.

It’s a really easy way for novice players to get out of a loss.
And yes, it’s as much of a draw as if you both only have kings left. Doesn’t matter how many pieces up you were.
