I mean the answer is that humans, for the most part, used to just walk around looking for shit to eat. That often ended up being a lot of fibrous root vegetables, legumes, and fruits. Not to mention farmers have selectively bred those kinds of crops (especially fruits) to make them more appetizing or to maximize the edible flesh, often sacrificing the density of fiber and other nutritents

For example, this is what watermelon used to look like. The white fleshy part is actually incredibly good for you and contains lots of fiber, but the red juicy part tastes better so we optimized for that instead

I know you probably made this post as a bit of a silly and I’m dropping a novel in your comments but I’m actually very passionate about this topic because even the recommended amount of fiber is less than what people should be getting ideally

This is why it’s so funny to me when people are worried about GMOs as if all of our fruits and vegetables haven’t been selectively bred for specific attractive traits

Yes but I think it’s worth mentioning that a lot of the uproar about GMOs was because big Ag wanted to make crops resistant to pesticides and herbicides so they could spray more shit on them without killing them. Which means we all end up with more bullshit in our food. But yes humans have been selectively breeding for basically as long as we’ve been doing agriculture
