Why not we have giant ass patches of grass used for nothing

Very true. And growing your own food or having a garden of native plants is awesome. But giving everybody an acre to live off themselves is wildly inefficient. Economies of scale is a real thing especially with farming. Growing all your own food would be its own full time job

Also suburbs are one of if not the most inefficient use of land
