Canada is your best bet, although many European countries allow you to gain citizenship if one of your ancestors had citizenship. It only goes so far back, but I know for a fact the UK and Germany both offer this as a process to citizenship.
I really need to just leave the states 💀 any tips on getting a job in Europe/Aus/Canada

If you can’t get citizenship via ancestry, however, you would need to get a green card by being hired by a company who can sponsor you. This is the case for most developed nations in the world. Every country is a lil different but I’d suggest checking out their immigration pages online.

Italy does also, but it depends on when your ancestors were born and how long ago they left Italy

Portugal used to be somewhat easy but since COVID I think they’ve gotten a ton of applications and an influx of people migrating from other EU countries
